The Gluten Free Diet

The gluten-free diet was designed for people with celiac disease and dermatitis herpetiformis, diseases which are associated with gluten intolerance. Gluten is the protein found in wheat, barley and other grains.

When gluten is ingested by people with celiac disease, the lining of the small intestines becomes injured resulting in weight loss, diarrhea, abdominal cramps or nutritional deficiencies.

It is not easy to follow this diet because many processed food items contain grains. People who are gluten-intolerant must read labels carefully and examine if the food contains hidden gluten. They must also have a list of foods that contain gluten so that they can avoid them.

Some of the foods that contain gluten are beer, pies, breads, malted drinks, meat loaf, breaded chicken or fish, pizza, waffles, gravy, spaghetti, dumplings, cakes and many more.

Because this diet is designed for people with specific medical conditions it provides no disadvantage for them except that the diet is hard to follow and therefore requires conscious food choices all the time.

The advantages of this diet are:

  1. It allows the small intestines of people suffering from celiac disease to heal
  2. It is also believed, although no definitive medical records are available yet, that the diet helps people suffering from multiple scelorosis, ADHD and autism spectrum disorders
