Ingredients:
pasta (100-150gm per person) olive oil (dash) balsamic vinegar (2-3 tablespoon per person) red onion (1 per person) courgette (or substitute with another veg of your choice) sun dried tomatoes (4-5 per person) Method: * boil your pasta, * stir fry chopped onion, courgette and / or any other vegetable of your choice (e.g. garden peppers, pumpkin squash etc). * When cooked, drain and pasta to the stir fried vegetables pan * add sun dried tomatoes and balsamic vinegar * quick stir and thats it! add basil or parmesan if required and server. |
